Zucchini Bread
Ingredients
- 3 eggs
- 1 cup canola oil
- 2 cups sugar
- 2 cups grated zucchini
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
Directions
Heat the oven to 350° F. Grease and flour two loaf pans.
In a large bowl, combine the eggs, oil, sugar, zucchini, and vanilla. Gradually mix in the flour, then add the remaining ingredients.
Distribute the batter evenly between the prepared loaf pans and bake for 40 minutes - 1 hour.
